Ingredients:

Craigmillar Carrot Cake Mix 1.0kg
Water 0.2kg
Vegetable Oil 0.1kg
Grated Carrot 0.3kg
Golden Syrup 0.1kg
Oats 0.5kg
Hazelnuts 0.1kg
Raisins 0.1kg
Cranberries 0.1kg
Craigmillar American Cream Icing

Preparation Method:

1. Blend oil, water and Golden Syrup together and add to mix over 1 min on slow speed using a beater.

2. Scape down and mix for a further 3 mins on medium speed.

3. Add carrot, oats, hazelnuts, raisins and cranberries and blend for 1 minute on slow speed.

4. Bake in sheets, for a 30x18cm sheet, scale at 5000g and bake at 195⁰C for approx. 30 mins.

5. When cool, finish with Craigmillar American Cream Cheese Icing sprinkled with chopped cranberries and hazelnuts.
