using CRAIGMILLAR CREME CAKE MIX

Ingredients:

Craigmillar Crème Cake Mix 1.0 kg
Liquid Egg 0.36 kg
Saladin Oil 5.5 kg
Water 0.22 kg
Blueberries 10%

Preparation Method:

1. Place mix in bowl fitted with beater. Add egg over 1 minute on slow speed.

2. Mix for 3 minutes on medium speed.

3. Scrape down, combine oil and water then add over 1 minute on slow speed.

4. Scrape down, mix for a further 3 minutes on slow speed.

5. Add 10% blueberries to the standard recipe. Mix and deposit 110g of batter.

6. into a muffin tin or cases.

7. Top with approx. 3g blueberries or if preferred 3g.

8. butter crumble.

9. Bake for 15-18 mins at 175-180⁰C then increase temperature to 190-195⁰C degrees and bake for a further 15 mins to achieve burst.
