You will need:

Plain wholemeal flour 300g
Plain flour sifted 150g
Melted butter 25g
California Raisins 300g
Sugar 2 tsp
Bicarbonate of soda 2 tsp
Salt 1 tsp
Carton buttermilk 284ml
Water 150ml
Makes a 1kg loaf, approximately 15 slices
Preparation time 10 minutes
Cooking time 35-40 minutes

Preparation Method:

1. Pre-heat the oven to 220˚C/425˚F/gas mark 7. Grease a baking tray and dust with flour.

2. Combine the flours in a large bowl, then add the butter and rub between your fingertips until evenly dispersed. Add the raisins, sugar, bicarbonate of soda and salt. Make a well in the centre.

3. In a jug whisk the buttermilk with the water, add to the dry ingredients and mix with a wooden spoon quickly to form a soft dough.

4. Turn onto the baking tray and shape into a 23cm/9in round. Using a sharp knife make a shallow cross on the top.

5. Bake in the pre-heated oven for 15 minutes then reduce the temperature to 200C/400F/gas mark 6 and bake for a further 20 minutes. Remove from the oven and transfer to a wire rack to cool.
